Enzyme preparations

Enzymatic preparations can be used to improve efficiency in the beer brewing process create a specific flavour and aroma in the finished beer.

Brewers can use specific enzymes to break down proteins, which can create unique flavors and aromas in the finished beer.

Enzyme preparations can also be used to create low-carbohydrate beers, as they can break down complex sugars into simpler more fermentable ones.

Gluten-free beer can also be produced with the use of enzymes.

Enzyme preparation for food use containing polygalacturonase (pectinase) derived from a selected strain of Aspergillus niger.

Malt extracts

Malt extracts can be used in the production of beer to change the organoleptic qualities of beer. They are also used for the production of non-alcoholic beers and new types of beers.

Malt extracts are concentrated forms of malted grains, usually barley, that are used to make beer. Extracts are made by mashing to release sugars and other soluble compounds. Then, by evaporating the liquid, a concentrated syrup or powder is obtained.

“Stand out from the crowd. Blend in with the best.” ZEBRA is used in the manufacture of reduced, low and no alcohol beers (0% & 0.0%) and malt beverages.

Hop extracts

Hop extracts are used in beer production for a variety of reasons, including convenience, consistency, and potential cost savings compared to using whole hop cones.

Hop extracts are concentrated liquid or powdered forms of the bitter, flavoring, and aromatic compounds found in the hop cones. These compounds are essential for the taste and aroma of beer.

The HopAlpha® Range provides easy to add, standardised bittering extracts made from hops. A range of bitterness intensities and flavour profiles can be used for kettle and post fermentation additions. Benefits of the range include light stability and also foam head retention.

Provides a standardised solution of readily soluble, like for like Bittering as you’r get from the kettle.

Provides a softer perceived bitterness with the added benefit of light stability, allowing beer to be packed in clear glass bottles.

Provides a harsher perceived bitterness but also enhances beer foam whilst providing light stability when used in the absence of a and iso-a-acids.

Provides light-stable hopping in beers whilst also improving beer foam stand and cling. Imparts a clean and smooth bitterness and is especially effective when used to develop low bitterness units (BU) beers.
